Mini Gherkin TzatzikiMethod:
1. Mix the yoghurt, grated cucumber, garlic, mint, lemon juice, and finely chopped mini gherkins in a bowl.
2. Season with salt and pepper.
3. Chill before serving.
Mini Gherkin Guacamole
Method:
1. Mash the avocado in a bowl.
2. Stir in mini gherkins, chilli flakes, coriander, onion, lime juice, salt, and coriander.
3. Mix until combined and serve immediately.
Mini Gherkin Salsa
Method:
1. Combine all ingredients in a bowl.
2. Let sit for 10 minutes to develop flavour.
3. Serve with tortilla chips or as a topping.
Mini Gherkin Hummus
Method:
1. Blend chickpeas, tahini, olive oil, lemon juice, garlic, and salt until smooth.
2. Stir in chopped mini gherkins.
3. Drizzle with olive oil to serve.

• 200g Greek yoghurt
• 20g chopped fresh mint
• ¼ cucumber, grated and drained
• 2 Opies Mini Gherkins, finely chopped
• 1 garlic clove, crushed
• 1 tsp lemon juice
• Salt and pepper, to taste

• 1 small red onion, finely chopped
• 20g chopped coriander
• 1/4 tsp chilli flakes
• Juice of ½ lime
• Pinch of salt
• Fresh coriander (optional)
Mini Gherkin Salsa
Ingredients:
• 2 tomatoes, deseeded and finely chopped
• ½ red pepper, finely chopped
• 20g chopped coriander
• 1/2 red chilli, chopped
• 1 tbsp runny honey
• 1 spring onion, finely sliced
• 2 Opies Mini Gherkins, finely chopped
• 1 tsp olive oil
• Juice of ½ lime
• Salt and pepper, to taste
Mini Gherkin Hummus

• 1 tbsp tahini
• 2 tbsp olive oil
• Juice of ½ lemon
