
Method
In a bowl, mash the avocado with a fork. Add the peas and mash lightly, leaving some texture.Stir in the lemon juice, olive oil, salt, and pepper.
Fold in the chopped Opies Onions in Red Wine Vinegar and fresh herbs.
Spread the smash generously over toasted sourdough.
Top with crumbled feta and a sprinkle of chilli flakes if desired.
Serve immediately and enjoy!
