Airfryer Beer Battered Fish Tacos

Method

1. In a bowl mix the flour and cornflour then season generously. Slowly pour in the lager, whisking until you have a smooth batter. Chill in the fridge for at least 30 minutes.
2. Place the red cabbage into a bowl and squeeze over the juice of one lime. Add a pinch of salt and place to the side.
3. Drain the cornichons and onions then blitz briefly in a blender to make a pickle salsa.
4. Remove the batter from the fridge and dip the fish into the batter. Spray your airfryer basket with a couple of sprays of cooking spray then air fry at 200ºC for 12 minutes, until crisp and golden.
5. Toast the tortilla in a dry frying pan, a minute or so on both sides, then add the fish, a generous amount of pickle salsa and all the toppings.

Ingredients

• 150g flour
• 60g cornflour
• Salt and pepper
• 1 x 330ml bottle lager
• ¼ red cabbage, shredded
• 2 limes
• 1 jar Opies Cornichons and Onions
• 600g white fish, cut into fingers (cod, halibut or hake)
• 8 soft tortillas

To serve:
• 1 avocado, sliced
• Salsa
• Sour cream
• Chopped coriander
