Method
1. Cut the onions into small pieces and sweat them lightly in the butter. Add the finely chopped mushrooms and sauté for about 3 minutes.2. Then pour in the liquids and simmer for 2 minutes over low heat, stirring constantly. Season to taste with the spices and sour cream and finely puree with a blender together with the Magic Texturizer.
3. Strain directly through iSi Funnel & Strainer into a iSi Thermo Whip. Screw on 1 iSi Professional Charger and shake vigorously 16 times.

150 ml milk
1 pinch pepper
20 g Butter to sweat
1 tbsp Magic Texturizer
200 g mushrooms
80 g onion(s)
50 g sour cream
