Method

1. Preheat the oven to 170ºC / 150ºC Fan / Gas 3. Whizz the oil, garlic, paprika, mustard powder, salt and pepper in a blender until you have a paste. Rub the mixture all over the pork.
2. Heat a large deep pan over a high heat and sear the pork on each side for a few minutes until browned.
3. Place in a deep roasting tray. Pour 300ml cider into the tray and cover with two pieces of overlapping foil. Roast in the oven for five hours, checking occasionally to see if there is enough liquid and topping up if needed.
4. When the meat is tender and falling apart, remove from the oven. Serve in a brioche bun with coleslaw, bbq sauce and Opies Mini Gherkins.

• 3 tbsp olive oil
• 3 large garlic cloves
• 3 tsp paprika
• 2 tsp mustard powder
• 1 tsp salt
• 1 tsp freshly cracked black pepper
• 2kg pork shoulder
• 300ml cider
To serve:
• Coleslaw
• BBQ sauce
• Opies Mini Gherkins, drained
• 16 brioche buns
