
Bloodbath Trifle
A spooky Halloween trifle layered with cherry jelly, custard, and topped with whipped cream and Opies Cocktail Cherry “eyes.” Opies Summer Berry Compote adds an extra burst of dark berry flavour and a dramatic blood-like drizzle.
Method
1. Prepare the jelly:Make the cherry jelly using water mixed with some of the reserved Opies Cocktail Cherry syrup for extra cherry flavour. Pour into a shallow dish and chill until set (about 2 hours).
2. Make edible eyes:
Place Opies Cocktail Cherries on a plate. Use black edible gel or icing pen to dot a small black “pupil” on each cherry to create creepy eyes. Set aside to dry.
3. Assemble the trifle:
In serving glasses or bowls, layer sponge cake cubes, jelly cubes, custard, and whipped cream. Repeat layers until almost full.
4. Add compote and decorate:
Drizzle Opies Summer Berry Compote over the top layer of whipped cream to mimic dripping blood. Arrange the cherry “eyes” on top. For extra effect, drizzle a little more compote or reserved cherry syrup around the cherries.
5. Chill and serve:
Refrigerate for at least 1 hour before serving.
Ingredients
• 1 packet red cherry jelly (or any red-flavoured jelly)
• 250g sponge cake or ladyfingers, cut into cubes
• 300ml custard (store-bought or homemade)
• 150g Opies Cocktail Cherries, drained (reserve some syrup)
• 300ml whipped cream
• 3–4 tbsp Opies Summer Berry Compote
• Black edible gel or black icing pen (for eyes)
• Optional: fresh raspberries or strawberries for extra “blood” effect
