Method
1. Spread the rocket or mixed leaves across a plate or shallow bowl.2. Arrange the 150g Opies Sliced Beetroot over the top.
3. Scatter over the feta, nuts and red onion if using.
4. Drizzle with olive oil and balsamic (or lemon).
5. Season lightly with salt and pepper.
6. Serve immediately or chill for a refreshing side.
Ingredients
150g Opies Sliced Beetroot, drained
A handful of rocket or mixed salad leaves
50g feta or goat’s cheese, crumbled
20–30g toasted walnuts or pumpkin seeds
½ small red onion, thinly sliced (optional)
1 tbsp olive oil
1 tsp balsamic vinegar or lemon juice
Salt & black pepper
