Al dente in texture, the green unripe nuts are picked from the trees before any hard shell has formed (and importantly before the squirrels have invaded) and steeped in a spiced vinegar to give their distinctively tangy, sweet flavour. Spectacularly versatile, there are many ways you can make the most of these flavoursome morsels. Try them as a topping on a luxury Welsh Rarebit, or bake them in a Beef, Ale & Pickled Walnut Pie. The pickling brine is packed full of punchy flavour too, making it too good to waste! It’s superb in a Vinaigrette Dressing and our very own Pickled Walnut Dipping Sauce.
