Side of Salmon with Dill, Lemon and Capers

Method

1. Preheat oven to 200°C / 180°C fan / gas 6.
2. In a small bowl, combine the dill, capers and shallot. Add 1 tbsp lemon juice from the jar of Opies Sliced Lemons then add salt, olive oil, seasoning and mix well.
3. Lay the salmon skin side down on a baking sheet, then spoon the dill and caper mixture generously along the centre of the salmon, before finally laying the lemon slices on top.
4, Bake in the oven for 20 minutes, until just tender and flaking.
5. To serve remove onto a platter, sprinkle over the remaining dill and add a few extra slices of lemon.

• A side of salmon, skin on (weighing 850g-1kg)
• 30g fresh dill, finely chopped
• 2 tbsp Opies Capers
• 1 shallot, finely sliced
• 10 - 12 Opies Sliced Lemons, lemon juice reserved
• 1 tsp salt
• 2 tbsp olive oil
