Mango & Passionfruit Pancakes


1. Sift the flour into a bowl then add the eggs and buttermilk. Stir thoroughly to combine until no lumps remain, then add 2 tbsp of the compote and mix again.
2. Heat a tsp of oil in a frying pan then add some batter, enough to make a pancake of about 8cm in diameter. Fry on one side for 1-2 minutes then flip over and repeat on the other side until golden brown. Repeat to make 12 pancakes.
3. Divide the pancakes up between 4 plates, add a scoop of ice cream and spoon over some more compote and passionfruit seeds, if using. Serve straight away.


• 150g self-raising flour
• 2 eggs
• 150ml buttermilk
• A jar of Opies Mango & Passionfruit Compote
• Vegetable oil, for frying
• Vanilla ice cream, to serve
• 1 passionfruit, seeds removed, to decorate
