Glickles (Glitter Pickles)

Method

1. Prepare the gherkins:
Pat the Opies Mini Gherkins dry with kitchen paper.
2. Coat with oil and lemon:
In a bowl, toss the gherkins with olive oil and lemon juice to lightly coat.
3. Add glitter:
Sprinkle edible glitter over the gherkins and gently toss until evenly covered and sparkling.
4. Season:
Add a pinch of sea salt and toss again.
5. Serve:
Arrange on a serving dish, optionally garnished with fresh herbs. Serve as a dazzling snack or cocktail garnish.

• 150g Opies Mini Gherkins, drained
• 1 tbsp edible glitter (food-safe, silver or green works well)
• 1 tbsp olive oil
• 1 tsp lemon juice or juice from Opies Sliced Lemons jar
• Pinch of sea salt
• Fresh herbs (optional, for garnish)
