Method
Preheat your air fryer to 180°C (360°F) for 5 minutes.In a bowl, combine the diced apples, granulated sugar, lemon juice, ground cinnamon, and chopped Opies Stem Ginger. Mix well to coat the apples evenly.
Roll out the puff pastry sheet on a lightly floured surface and cut it into 4 equal squares.
Divide the apple mixture evenly among the 4 squares of puff pastry, placing it in the centre of each square.
Fold each puff pastry square diagonally over the filling to form a triangle shape. Press the edges firmly to seal.
Use a fork to crimp the edges of each turnover to ensure they are well sealed.
Brush the tops of the turnovers with beaten egg.
Place the turnovers in the air fryer basket in a single layer, leaving some space between each turnover.
Cook the turnovers in the air fryer at 180°C (360°F) for 12-15 minutes, or until they are golden brown and crispy.
Once cooked, remove the turnovers from the air fryer and let them cool slightly.
Dust the turnovers with icing sugar, if desired.
Serve the warm air fryer apple turnovers with vanilla ice cream or custard, if desired.

50g granulated sugar
1 tablespoon lemon juice

50g Opies Stem Ginger, finely chopped
1 sheet ready-rolled puff pastry (about 320g)
1 egg, beaten
Icing sugar, for dusting (optional)
