A zingy, fruity mocktail with a tangy twist — perfect for summer sipping or impressing guests with something a little different.

Method

1. Prepare the glasses:
Take two tall cocktail glasses and fill them with ice and 2–3 cherries each.
2. Mix the base:
In a cocktail shaker or jug, combine the tamarind paste, lime juice, cherry juice, pineapple juice, and a dash of maple syrup (adjust to your preferred sweetness). Shake or stir well.
3. Assemble the drink:
Pour the mixture evenly into the glasses. Top up with chilled ginger beer.
4. Garnish & serve:
Add a slice of lime to each glass and give it a quick stir. Serve immediately.

Tip

Tip: Want to make it boozy? Add a splash of rum or bourbon — both pair beautifully with the tart, fruity flavours.

• 2 tsp tamarind paste
• 2 tbsp lime juice
• 3 tbsp cherry juice (from the jar)
• 150ml pineapple juice
• Maple syrup, to taste
• Ginger beer, to top up
• Opies Maraschino Cocktail Cherries (2–3 per glass)
• Lime slices, for garnish
• Ice
