
Method
1. Preheat the oven to 180°C (160°C fan) / 350°F. Grease a 6-hole muffin tin with butter or oil.2. In a mixing bowl, beat the eggs with the milk or cream until smooth. Season lightly with salt.
3. Stir in the diced pumpkin, ham, grated cheese (if using), and crushed Opies Green Peppercorns.
4. Divide the mixture evenly between the muffin holes.
5. Bake for 18–20 minutes or until the frittatas are set and lightly golden on top.
6. Allow to cool slightly before removing from the tin.

• 100g cooked pumpkin, diced
• 100g cooked ham, diced
• 4 large eggs
• 3 tbsp milk or cream
• 1 tbsp Opies Green Peppercorns, drained and lightly crushed
• 50g grated cheese (optional, cheddar or your choice)
• Salt, to taste
• Butter or oil, for greasing
