Vanilla Crescent Topping

Method

1. Chop the white chocolate and melt it either in the microwave or using a double boiler (bain-marie).
2. Meanwhile, finely grind the vanilla crescent cookies, or blitz them thoroughly in a food processor.
3. Add the milk, cream, vanilla sugar, and rum to the melted chocolate, and then stir in the ground vanilla crescent cookies.
4. Strain the entire mixture through the iSi Funnel & Sieve directly into an iSi Profi Whip. Attach an iSi Professional Charger and shake vigorously 16-18 times.

240 ml Cream 30% fat
70 g white chocolate
15 ml rum
15 g QimiQ natural
100 ml milk
