Thai Coconut Lime Soup

Method

1. Sauté finely chopped onion in sesame oil until translucent. Add diced sweet potato, pour in the water, and let it simmer.
2. Sprinkle with flour and then bring to a boil with coconut milk, chicken broth, and lime juice. Season with the spices and then blend finely with a hand mixer.
3. After that, strain the entire mixture through the iSi funnel & sieve into the iSi Thermo Whip. Screw on an iSi Professional Charger and shake vigorously 16 to 18 times.

5 g Thai spice or green curry paste
80 g onion(s)
200 ml Water
100 g sweet potato(es), peeled
40 ml lime juice
200 ml Stock
300 ml Full-fat coconut milk
15 g flour
20 ml sesame oil
