Colada Old Fashioned
The Colada Old Fashioned Cocktail combines the flavours of the classic Pina Colada with the richness of Aged Rum. The MONIN Pina Colada Syrup brings the creamy and tropical pineapple coconut flavours. This luxurious and delightful cocktail is best served in a chilled coupette glass with a block of ice.
Method1. Pour all ingredients into a mixing glass and stir for 15-20 seconds.
2. Pour into a chilled rocks glass with a block of ice.
10 ml MONIN Pina Colada syrup
50 ml Coconut Washed Aged Rum (Eld 12yr)
2 Dashes Pineapple Bitters
2 Drops Saline Solution
700 ml Rum
35g Coconut Oil.
Combine both the ingredients into a saucepan and gently bring to the boil to dissolve the ghee. Cool in a freezer until a layer of fat forms. Remove the fat layer then pass the liquid through coffee filter paper, then bottle.
Garnish: Sugar disc and discarded orange peel.
Sugar Disc: Place some caster sugar onto a slice of orange and brulee with a blowtorch, allow to cool and remove from the orange slice.
