Method
1. Combine Combine all the burger sauce ingredients in a bowl, Season to taste.2. Mix the marinade ingredients together, add 1 tbsp olive oil, and marinate the chicken for 2-4 hours.
3. Make the Burger sauce by combing all the ingredients.
4. Season to taste and put aside.
5. Slice the Tomatoes.
6. Heat griddle to a medium high heat.
7. Chargrill chicken for approximately 4-5 minutes each side, depending on the thickness of the breast. Until the juices run clear or an internal temperature of 74c when tested with a
temperature probe.
8. Allow to rest for 3-4 mins. Meanwhile, toast the brioche bun.
9. Place the the lettuce on the base of the bun, followed by the tomato, chicken, cheese, sliced gherkins and burger sauce.

The burger sauce will keep in the fridge, in a sealed container for up to 4 daysIngredients

1 tsp Harissa
Pinch of Onion Powder
Pinch of Paprika
Pinch of Parsley
Salt & Pepper
Lemon Juice
1 tbsp Olive oil
1 x Brioche Burger Bun, toasted
Burger Sauce - homemade w/ gherkins - see below
Mayo / Ketchup
4 x Opies sliced Gherkins
Lettuce / Rocket
2 x slices Tomato
1 x Sliced Cheese - optional.
Burger Sauce with chopped Gherkins

6 tablespoons Mayo
2 tablespoons Tomato Ketchup / 1 tbsp good quality Tomato Puree
1 tablespoon America Mustard
2-3 tsp Worcestershire Sauce - to taste
3 x Opies Gherkins with Dill, chopped
2 tsp Gherkin Juice
1 x Pinch Smoked Paprika
1/2 tsp onion powder
Salt
Pepper
